This book is chock full of information to help vegetarians eat enough protein without using a single recipe. It's also chock full of interesting recipes using produce and items easy to find the grocery store here in OK. All of the recipes I've tried (8 or so, some more than once) are easy and fast, which is as important for me as the nutrition and flavor.
